Mollington
White Cheshire
Made by Chris Wade, Mollington Grange, Chester. Britains
oldest cheese which he has been saved from extinction. Chris’s
cheeses are hand made using Cheshire raw milk. The flavour is
clean and fresh and long on the palate. |
Mollington
Blue Cheshire
Made by Chris Wade, Mollington Grange, Cheshire’s
oldest cheesemaking farm. A revival of an old recipe last made
12 years ago, using steel rods and high humidity to create a
blueing that develops over 8 weeks. |
Cropwell
Bishop Stilton
Made by Iain and David Skailes, Vale of Belvoir, Nottinghamshire.
Cheese making in this village dates back to 1847 and is now
the only family run cheesemaker of Stilton. The creamy flavour
is balanced with even blueing and a thin crust. Each Stilton
is hand made and selected for us at 13 weeks maturity. |
Allerdale
Made by Carolyn and Leonie Fairbairn at Thornby Moor
dairy in Cumbria. Her dairy is just 7 miles west of Carlisle
on the old Roman road beside Hadrians Wall. British cheese Award’s
winner 2002, out of 750 entries for this deep flavoured cheese
from local raw goats milk- cloth bound. |
Brindley
Buffalo Brie
Made by Katy Hollinshead, a young cheesemaker trained
by Sanda Allwood at Ravens Oak Dairy, Burland, Cheshire.
This organic farm takes their buffalo milk from Sigsworth's
buffalo's in Holywell, North Wales. The result is
a sweet and velvet flavour - part of Butler's range of traditional
regional cheeses. |
Cheese's are accompanied by a selection of biscuits.
